Easiest Slow Cooker Chicken and Dumplings

This slow cooker chicken and dumplings is comfort food at its finest. So easy and completely made from scratch with just a few simple ingredients that you add to your crockpot. I love a bowl of this warm and flavorful dish.  To me it tastes like delicious chicken pot pie and my kids say it tastes like chicken noodle soup.  The dumplings are super simple to make with just a few ingredients and you add them into the broth the last hour of cooking.  Simply amazing. My favorite chicken and dumplings ever. Try it today….you won’t be sorry!

Ingredients:


2 boneless skinless chicken breasts

3 tbs olive oil

6 carrots diced

4 celery stalks diced

2 onions chopped

2 tsp poultry seasoning

2 tbs fresh parsley

1/4 cup of flour

6 cups of chicken broth

Dumplings:

2 1/2 cups of all purpose flour

1 tbs baking powder

1 tsp salt

1 cup milk

4 tbs melted butter

 

Directions:

Heat olive oil in in large skillet and saute onions, celery, and carrots for about 5 minutes or until soft.

Sprinkle with poultry seasoning and stir until well combined.

Sprinkle flour and stir until all veggies are well coated.

Transfer vegetables to slow cooker.

Place chicken breasts on top.

Pour chicken broth over chicken, add 1 tbs parsley,  and mix ingredients.

Cover and cook on high for 3 hours on high or on low for 7 hours.

Take chicken breast out and shred.

Return chicken back to crockpot and stir.

Mix all dry ingredients for dumplings in a bowl.

Add all wet ingredients to bowl and mix well.

Take tablespoonfuls and add to the slow cooker starting around the edge and finishing with two or three in the center.

Continue to cook about another 45 minutes to an hour.

Sprinkle with some fresh parsley and serve.

Notes
  1. Used a 5 quart slow cooker.
