Easy Slow Cooker Whole Chicken

This is seriously one of my favorite recipes for the crockpot because well its super fast and super easy. This is also what I bring to Tyler’s family holiday meals.  Everyone always raves about it. All it takes is an onion, some seasoning, a whole chicken and your trusty slow cooker. This crockpot whole chicken is tender, moist, and so so flavorful.  I wasn’t able to get it out of the slow cooker without it falling apart so my final picture of the chicken what I saw once I took the lid off. As you can see it releases quite a bit of liquids which can be use to also baste the chicken for even more flavor. I serve it with steamed veggies and rice pilaf or mashed potatoes.

Ingredients:


1 5 lb roasting chicken

1 large onion

2 tbs olive oil

2 tsp paprika

2 tsp salt

1 tsp onion powder

1 tsp garlic powder

1 tsp thyme

1 1/2 tsp fresh ground pepper (I add this at the end)

Directions:

Quarter one onion and place in the bottom of the slow cooker.

Rinse chicken and pat dry.

Rub the olive oil all over the chicken.

In a small bowl mix paprika, salt, onion powder, garlic powder, and thyme.

Rub spice mixture all over chicken including inside ( I use latex gloves lol).

Sprinkle with pepper.

Cover and cook on high for 4 hours or on low for 7 hours.

  1. Use a 6-7 quart slow cooker.

  3. This is going to sound silly I am sure. However, please keep in mind I am brand new to slow cooking….actually cooking in general. Does the chicken need to be defrosted first, or can it be cooked while frozen?

  4. Can you stuff the chicken?

  5. Is a roasting chicken different than a normal chicken?

  6. Have you added anything else to this meal? I would like to add carrots mushrooms potatoes and green beans just not sure how it eould taste or if I should separate some items like doing the green beans and mushrooms separately? Not sure first time in using a crock pot and making making a whole chicken

  7. Have you tried anything else with the chicken like red skin potatoes, carrots etc. I also have green beans and mushrooms too. Not sure if I should ok everything together or separate some of it. First time using a crock pot and making a whole chicken. Also did you use any broth or juice or did u just let the chicken cook in its natural juices ?

    • I have added carrots and potatoes around the chicken and they came out great! I haven’t tried the green beans and mushrooms, but I would think it would be ok, you might just need to take them out earlier. The chicken itself releases a lot of liquid so I never add any.
