Easy no-fuss beef chili. 

         I make this recipe every year when football comes around. There are a ton of beef chili recipes out there but this slow cooker easy beef chili is really simple and can be adjusted to your taste.  Before I had kids I would add cayenne pepper or a dash of hot sauce, but now I keep it spice free because the girls love to eat it with chips. It’s a great crowd pleaser and can be used as a topping on hot dogs, nachos, or served by itself. I always have left overs and I freeze them for another time.

Ingredients:

1 tbs. olive oil


2 lbs. 91% lean ground beef

1 large onion, chopped

1 green bell pepper , chopped

2 cans red pinto beans

2 cans white northern beans

2 garlic cloves, minced 

2 tbsp chili powder

1 tbs smoked paprika

1 tbs dry oregano

1 28 oz. can crushed tomatoes

1 16 oz. can tomato sauce

1 cup water

1 tsp. salt

1 tsp pepper

Toppings of your choice such as cheese and onions.

 

Directions:

Brown the beef and onion in a large skillet over medium-high heat until beef is cooked through and onions are soft.

Transfer to the slow cooker.

It was nice and rainy here in Orange County last week, but instead of enjoying my favorite weather I was fighting an awful cold. Ever since I was little my mom’s chicken noodle soup was my favorite remedy. It was so helpful while I was in survival mode trying to take care of three little ones. This also makes a large batch so I can have it the next day as well. It’s warm, flavorful, and so comforting when fighting a cold. This slow cooker chicken noodle soup is a super simple recipe that can be thrown together in five minutes in the morning no matter how under the weather you feel, and you can have a hot bowl by the afternoon. 

Ingredients:
2-3 boneless skinless chicken breasts
6 medium carrots peeled, sliced 1/4 inch thick
1 medium yellow onion, halved
3 stalks celery, sliced 1/4-inch thick
1 teaspoon kosher salt
1/8 teaspoon black pepper freshly ground
2 sprigs fresh thyme
1 dry bay leaf
10 cups low sodium chicken broth
3 cups dry egg noodles
1/2 cup fresh parsley, finely chopped


Directions:

Add chicken, carrots, onion, celery, salt, pepper, thyme, bay leaf and chicken stock to slow cooker.  slowcookersoup

Cover and cook for 4 hours on high, or 8 hours on low.

Remove chicken from slow cooker and shred.

Return shredded chicken to slow cooker.

Add pasta to the slow cooker and cook on high setting for 15-25 minutes, or until pasta is tender.

 

Taste the cooking liquid and season with more salt and pepper as needed. 

Add chopped parsley, stir, and serve.

In 2011 Eva Longoria, my favorite Desperate Housewife released her first cookbook Eva’s Kitchen.  I was lucky enough to meet her and get a signed copy, and be completely starstruck. Her recipes range from casual dishes she serves at home, to dishes she acquired during her travels abroad.   I love the gorgeous pictures and that every single recipe comes with a short background story.  I have made several of her recipes, and I can tell you that each one is absolutely fantastic.  This slow cooker ropa vieja (shredded beef)  is one of my favorites though, because it can feed a large group and is very versatile. Roma Vieja translates to old clothes in Spanish because of its scraggly appearance and is also a popular Cuban dish. My recipe is slightly modified from Eva’s recipe and is  super easy to make.  If you’re looking for a flavorful dinner dish, try it, you will love it.

Ingredients:


3 tbs. olive oil

3.5 lbs flank steak

2 tbs cumin

2 tsp garlic powder

2 tsp. salt

1 tsp pepper

1 large yellow onion, roughly chopped

1 yellow bell pepper, thinly sliced

1 red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

cup 3 cups beef broth

8 oz can tomato sauce

6 oz can tomato paste

 

Directions:

In a large skillet, heat olive oil over medium-high heat.

Season flank steak evenly  with cumin, garlic powder, salt, and pepper.

Add flank steak and cook until browned on both sides.

Transfer steak to slow cooker.

Add onion, bell peppers, and cilantro to slow cooker.

In a large bowl or measuring cup, mix together beef broth, tomato sauce, and tomato paste.

Pour over meat and vegetables in the slow cooker.

This slow cooker beef and potato stew is the ultimate comfort food! It’s full of flavor and so filling. Super easy to throw together and is a favorite even for the pickiest ones in your family.

Ingredients:


2 tablespoons olive oil

3.5 lbs. stew meat, cut into 1-inch pieces

2 tsp salt 

1 tsp fresh ground pepper

2.5 lbs baby yellow potatoes, quartered

1 onion, diced

4 cloves garlic, minced

2 tsp. dried thyme

1 tsp paprika

1 bay leaf.

3 cups beef broth

16 oz. can tomato sauce

2 tbs Worcestershire sauce

1/4 cornstarch

1/2 cup water

2 tablespoons chopped fresh parsley leaves

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season beef with salt and pepper.
  3.  Add beef to the skillet and cook until evenly browned, about 2-3 minutes.
  4. Place beef in 6 quart slow cooker. beefstew

So I have been on a taco kick lately.  I think tacos are an easy weeknight meal that’s fairly easy to prepare.  Now, my kids are super picky, and this is their absolute favorite dinner…ever! So every Tuesday at our house is Taco Tuesday!  There is no complaining and everyone wants seconds….and thirds! Made in the slow cooker and using a homemade taco seasoning these slow cooker ground turkey tacos are super delicious. The meat comes out super tender and is great on top of salads, in burritos, or tostadas.  It makes great left overs and freezes well too!  

Ingredients:


2.5 lbs lean ground turkey meat

1 tbs. chili powder

2 tsp oregano

2 tsp cumin

2 tsp paprika 

2 tsp garlic powder

2 tsp onion powder

2 tsp salt

1 tsp pepper

12 corn taco shells

Toppings:

lettuce

tomatoes

shredded cheese

Directions:

DIRECTIONS:

  1. Brown the ground turkey in a large nonstick skillet over high heat, breaking it into smaller pieces as it cooks.
  2. Add meat to slow cooker. slowcookerturkey

I haven’t been posting for a while. I’ve had some health issues that thank the Lord are now and hopefully forever taken care of. I’ve also started teaching full-time, while at the same time trying to balance my home life with two very needy little girls, and a nine month old baby. To top everything off….my husband is living away from home during the week because he was just hired as a firefighter. So many blessings and so little time. But I am back and I have decided I really need to continue this blog because it makes me oh so happy to hear from you and know that my recipes have helped put dinner on the table for another busy family. Plus it’s very therapeutic for me ….it’s my little happy corner where after a long day I can write and share my photos and obsessive passion with food. 

Ok enough of that! Here is one of the easiest recipes you will ever make. This slow cooker salsa verde chicken tacos recipe will seriously become a regular in your household. Just a few ingredients and you have a delicious salsa verde chicken filling for tacos, nachos or a bed of lettuce.

Ingredients:

Simple and easy dinner idea! Juicy and tender crockpot turkey breast seasoned to perfection, and ready to serve with your favorite sides. You can leave the skin on but we prefer to take it off.  Take a few minutes to season the turkey breast and set it and forget it! 

Ingredients:


1 large yellow onion, halved and sliced thick

3 medium carrots peeled and cut in half

1 double breasted bone-in turkey breast

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon thyme

1 teaspoon oregano

1 teaspoon garlic powder

1 teaspoon sea salt

1/2 teaspoon freshly ground pepper

Directions:

Place onion and carrots in the bottom of your slow cooker.

Rinse and take skin off of  the turkey breast and place on top of the onion, breast side up.

Drizzle olive oil over the top and rub in.

In a small bowl mix paprika, thyme, garlic powder, salt, and pepper. 

Rub spice mixture all over turkey breast.

Cover with lid and set the slow cooker to low for 4-5 hours.

Continue to cook on low until internal temperature reads 165 degrees F.

  1. 1 large yellow onion, halved and sliced thick
  2. 3 medium carrots peeled and cut in half
  3. 1 double breasted bone-in turkey breast
  4. 2 tablespoons olive oil
  5. 1 teaspoon paprika
  6. 1 teaspoon thyme
  7. 1 teaspoon oregano
  8. 1 teaspoon garlic powder
  9. 1 teaspoon sea salt
  10. 1/2 teaspoon freshly ground pepper
Instructions
  1. Place onion and carrots in the bottom of your slow cooker.
  2. Rinse and take skin off of the turkey breast and place on top of the onion, breast side up.
  3. Drizzle olive oil over the top and rub in.
  4. In a small bowl mix paprika, thyme, garlic powder, salt, and pepper.
  5. Rub spice mixture all over turkey breast.
  6. Cover with lid and set the slow cooker to low for 4-5 hours.
  7. Continue to cook on low until internal temperature reads 165 degrees F.
  8. Slice turkey and serve with your favorite sides such as mashed potatoes and brussels sprouts.

This healthy and hearty slow cooker recipe for Mexican Spaghetti Squash is the perfect lunch or dinner…you don’t even need a bowl!  


Just slice a spaghetti squash, scrape out the seeds, and add black beans, some tomatoes and chilis, set and forget in in you slow-cooker for a few hours, and top it with your favorite toppings like shredded cheese, cilantro, avocado, etc.  Give it a fresh citrusy taste with a squeeze of lime and you have a complete healthy and delicious meal.  When I first attempted this Mexican Spaghetti squash it was a complete experiment and I was honestly worried about how it would turn out in the slow cooker, but it was a hit and completely delicious. Perfect healthy lunch or dinner.  A great low carb dish that even your kids can throw together…so so easy. It literally takes a few minutes to assemble. I can’t wait to experiment with other veggies and flavors. 

 

Ingredients:

1 medium spaghetti squash, halved

1 10 oz. can diced tomatoes with green chiles

1/2 14 oz. can black beans

1 tsp oregano

1 tsp cumin

1 cup shredded Mexican cheese

1/4 cup fresh cilantro, chopped

Directions:

Cut spaghetti squash in half.

Scoop and discard seeds.

Place squash in 6-7 slow cooker cut side up.

In a medium bowl mix beans, tomatoes oregano, and cumin.

Spoon mixture over squash.

Cover and cook on low for 6-8 hours or on high for 3-4 hours or until squash is tender.

Sprinkle with cheese and cover and cook for 10 minutes or until cheese is melted.

When squash is cool use a fork to separate spaghetti squash strands.

I have always been a macaroni and cheese lover.  Growing up my mom always made it from scratch and it was always one of my favorite dishes. I have seen so many versions of this on Pinterest but they all have either processed cheese or a canned cream soup and if you have been following my blog, you know that I do not use any of that in my recipes.  Let me just tell you that this super easy slow cooker mac and cheese is ah-mazing, if I do say so myself.  It is creamy and flavorful.  Simple ingredients come together to make the perfect creamiest slow cooker mac and cheese. This however isn’t a slow cooker dish you can throw in and come back to in a few hours because it only takes two hours on low and it needs to be stirred after one hour, but I do promise you perfectly cooked noodles and a rich creamy cheese sauce. This easy slow cooker mac and cheese will surely be a hit for any occasion.

Ingredients


1 lb. uncooked macaroni noodles

12 oz. can evaporated milk

3 1/2 cups low fat milk

3 cups shredded sharp cheddar

1/2 tsp pepper

Directions:

Place macaroni noodles in slow cooker.

Add evaporated milk and low fat milk, stir.

Add sharp cheddar cheese and pepper.

Stir well.

Cover and cook on low for one hour.

Uncover, stir well and cover again.

Cook additional hour, carefully watching to make sure noodles are cooked.
