Healthy Slow Cooker Chili

This slow cooker chili is so healthy and a protein powerhouse! It has kidney beans and lean ground turkey and is packed with flavor.  Now if you happen to not be a fan of turkey no worries….my father-in-law refuses to eat anything made with ground turkey…so naturally when I first made this I didn’t tell him and guess what….he didn’t know. But…if you are dead set on using beef  please feel free to do so. This chili is so yummy served with chips, lots of toppings such as onions, cheese, jalapeños, sour cream, or with delicious homemade cornbread.  Throw everything together in the morning and come home to a warm and savory meal.  To save even more time I brown the turkey, onions, and peppers the night before and put it in the fridge, that way it takes less than 5 minutes to set it and forget it in the morning.

Ingredients


1 1/4 lbs ground turkey

1 large yellow onion, chopped

4 garlic cloves, minced

1 green pepper chopped

1 jalapeno chopped

2 (16 oz) cans red kidney beans

1 (10 oz) diced tomatoes with chiles

2 (15 oz) cans of tomato sauce

3 tbs chili powder

1 tsp oregano

1 tsp cumin

1 tsp paprika

1/2 tsp pepper

1/4 tsp cayenne

1 tsp salt

1 tsp brown sugar

1 cup water

1 tsp olive oil

Directions

Over medium heat add 1 tsp olive oil

Saute ground turkey, onion, green pepper, and jalapeño until meat is browned and onions and peppers are soft and add to slow cooker.

Add beans, tomatoes, tomato sauce, chili powder, oregano, cumin, paprika, pepper, cayenne, brown sugar,  and salt.

Stir everything.

Add water and stir again…

Cook on low for 7-8 hours, or on high 3-4 hours.
