Slow Cooker Beef Goulash

This slow cooker beef goulash is a Hungarian beef stew was a regular in our house while I was growing up.  My mom makes this beef goulash super simple and uses plenty of paprika. She makes it on the stove but of course I wanted to adapt it to the slow cooker. I mean who wants to slave over a hot stove??  Because it is so versatile, you can also add other veggies such as mushrooms or carrots. Tender chunks of beef simmer in a tomato and paprika sauce to create a delicious dish that can be served with noodles, mashed potatoes, or simply on its own.  Traditional Hungarian goulash I am told can sometimes include potatoes and is more of a soup. My goulash is a little thicker but kid and freezer friendly, so you should definitely give it a try. This crockpot beef goulash is the perfect dish for those chilly fall nights.


 

Ingredients:

2 tbs olive oil

3 lb. beef stew meat, trimmed of fat

2 tsp. salt

1/2 tsp black pepper

3 tbs. flour

2 med. yellow onions, roughly chopped

4 garlic cloves, minced

3 tbs paprika

2 red bell peppers, diced

8 oz. can tomato sauce

2 cups beef broth

3 tbs fresh parsley, chopped

Directions:

Add olive oil to medium pan, over medium high heat.

Add beef stew meat to a large bowl and sprinkle with salt, pepper, and flour.

Stir to coat.

Brown beef stew meat in batches, in medium pan.

Add to slow cooker.

Add onions, garlic, and paprika to pan and cook over medium heat for 3-5 minutes and add to slow cooker.

Add diced bell peppers to slow cooker.

Add tomato sauce and beef broth to slow cooker, stir.

Cover and cook on low for 8-10 hours, or on low for 4-5 hours.

Add fresh chopped parsley.

Serve over noodles or mashed potatoes.
