Slow Cooker Beef Wraps

I saw a version of these crockpot beef wraps in a Taste of Home magazine and they immediately caught my attention! These easy wraps are so healthy! The beef roast is coated with spices and simmers in the slow cooker with onions, jalapeños, garlic, cilantro, and tomatoes. Serve it on whole wheat tortillas with the toppings of your choice and voila ….you have a delicious and healthy meal. It doesn’t have too much spice and is perfect for the whole family.  Super tasty with some fresh toppings like cilantro, avocado, tomatoes, or jalapeños.


Ingredients

2 15 oz. cans of tomato sauce

1 medium yellow onion chopped

1 jalapeno, minced

4 garlic cloves, minced

1/2 cup chopped fresh cilantro

2 tsp chili powder

1 tsp cumin

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

2 tsp paprika

1 3-4 lb. boneless round roast

2 limes juiced

Directions

Pour tomato sauce in bottom of slow cooker.

Chop your onion, jalapeño, garlic, and cilantro.

Add to slow cooker and mix.

In a small bowl mix chili powder, cumin, garlic powder, onion powder, oregano and paprika.

Rub all over roast.

Place in slow cooker and scoop some of the onion mixture over the roast.

Squeeze juice of limes on roast.

Cover and cook on low for 8-10 hours or on high for 4-5 hours.

Shred beef in slow cooker.
