Slow Cooker Bolognese

This bolognese sauce is one of my very favorite Italian dishes.  The bolognese sauce originates in the Italian town of Bologna and is a meat sauce that is slowly simmered with onions, carrots, celery, milk and wine.  It does take a little prep beforehand but the results do not disappoint.  This is a dish worthy for company but at the same time very popular with the little ones.  Made from scratch with simple ingredients, this dish will become a favorite in your household.  This makes a big batch so I like to freeze half and that way I have another dinner ready to go on a busy night.

Ingredients

1 tbs extra virgin olive oil

2 slices bacon, finely diced

1 large yellow onion, finely diced

2 celery stalks, finely diced

4 carrots, finely diced

4 cloves of garlic, minced

2 tsp sea salt

2 lbs grass fed lean ground beef

1 cup low fat milk

3/4 cup red wine 

2 28 oz. cans of crushed tomatoes

1 28 oz. can whole peeled tomatoes

1 tbs Italian seasoning

 

Directions:

In a large pan, add evoo and diced bacon, and cook for 4-5 minutes over medium-high heat.

Add onions, celery, carrots, garlic, and salt, and cook until vegetables are soft (about 5-7 minutes).

Place vegetable and bacon mixture in slow cooker.

Add ground beef and cook until no longer pink.

Add milk and cook for another 3-5 minutes.

Add wine and cook another 2-3 minutes.

Pour beef mixture over vegetables in slow cooker.

Add tomatoes and Italian seasoning and stir well.

Cook on low for 6-8 hours or on high for 3-4 hours.

Top with parmesan cheese and serve with your favorite pasta or zoodles.
