All you need to make these healthy slow cooking chicken fajitas are a few fresh ingredients and only about five minutes to throw together. All you need to do is slice your veggies, season your chicken breast and the slow cooker will do the rest of the work for you. They simple, easy and delicious with your favorite toppings. Because I work full time, I like to just throw everything in the crockpot and set it, however if you are home and you want you want your veggies more tender
3 boneless skinless chicken breasts
1 (14.5 oz) can petite diced tomatoes with green chilies
3 bell peppers, sliced
2 large yellow onions sliced
4 cloves garlic, minced
2 tbsp chili powder
2 tsp ground cumin
1 tbsp paprika
2 tsp onion powder
1 tsp garlic powder
1 tsp salt
3/4 tsp pepper
juice of two limes
In a bowl mix chili powder, cumin, paprika, onion powder, garlic powder, salt and pepper.
Place half of the onions and peppers on bottom of slow cooker.
Place chicken breast on top and top with seasoning mixture.
Add diced tomatoes.
Add minced garlic.
Top with remaining onions and peppers.
Squeeze juice of limes over top.
Cover and cook and on high for 3-4 hours or on low for 6-8 hours.
Take out chicken and slice.
Put back in the slow cooker.
Top with your favorite toppings. We chose shredded cheese, sour cream, and cilantro, with more lime.
