Slow Cooker Chicken Paprikash

Chicken Paprika or chicken paprikash as it was always called in our house while I was growing up, is a delicious and savory stew that originates in Hungary.  It is super simple and with a few ingredients and my favorite spice paprika, you will have a stew of chicken, onions, and bell peppers that will keep you coming for seconds. This slow cooker version is super tender and juicy, perfectly flavored by the paprika and mellowed by the sour cream.  You van shred your chicken and throw it in the crockpot or leave it whole. Try it and you won’t be sorry.

Ingredients:


8 pieces of chicken ( I used 6 boneless, skinless thighs, 2 boneless skinless breasts)

3 tablespoons flour

1 teaspoon sea salt

1 teaspoon freshly ground pepper

3 tablespoons canola oil

2 cups onions, chopped

½ tsp of sugar

1 diced red bell pepper

1 can (4 oz) tomato paste

3 tablespoons sweet paprika

2 tbs minced fresh parsley

1 1/2 cups reduced-sodium chicken broth

1 cup reduced-fat sour cream

Directions:

  1. Season chicken with salt, pepper, flour. and paprika.
  2. Add chicken and brown on each side.
  3. Add chicken to slow cooker.

4. Add onions to pan and sprinkle with paprika and sugar. Cook until soft for about 2-3 more minutes and add to the slow cooker.

5. Add bell pepper and parsley.

6. Mix broth and tomato paste and pour over chicken and vegetables.

7.  Cook on low for 8-10 hours or on high 4-5 hours. 

8. Remove the chicken to a platter and stir in sour cream and stir well.

9. Add the chicken back to the crockpot.

10. Serve over egg noodles.

11. Add extra sour cream if desired.
