Slow Cooker Chicken Soup

Ok it is precisely 11:09 pm. Barely getting this recipe published before midnight.  The girls are in bed and baby is finally asleep, and I can’t keep my eyes open so I will make this short.  This is a super easy, super healthy, gluten free crockpot chicken soup. I hope you enjoy it…..and I’m really hoping baby gives me ay least 4 hours of sleep…all done….goodnight.

Ingredients

3 boneless skinless chicken breasts

1 large yellow onion, diced

3 whole ribs of celery, sliced

5 carrots, peeled and chopped

1 whole bay leaf

96 ounces low sodium chicken broth (3 cartons)

2 teaspoons salt

1 tsp ground Black Pepper

2 tbs. fresh parsley, chopped.

Directions:

Place chicken breast in bottom of crockpot.

Add onion, celery, carrots and bay leaf.

Add chicken broth.

Stir.

Cover and cook 8-10 hours on low and 4-5 hours on high.

Take chicken out and shred.

Place back in the crockpot and stir.

Add fresh parsley.
