Slow Cooker Chicken Tortilla Soup

It’s Memorial Day and we have big plans to bbq some delicious carne asada, pollo asado, and some delicious veggies today! I realize it is going to be a warm day here in Southern California but I seriously have the strongest love for soup…all soup, but my favorite soup of all time is chicken tortilla soup.  I think it will go well with the rest of the food and we will have all the toppings already for our carne aside tacos.  This slow cooker chicken tortilla soup is brothy and delicious. Healthy and  easy, it takes about 10 minutes to prep and set. 


Ingredients:

28 oz. can crushed tomatoes

1 14.5 oz can diced tomatoes

1 14 oz can diced tomatoes with mild green chiles

1.5 lb boneless skinless chicken breast (3)

4 zucchinis diced

1 onion diced

3 garlic cloves smashed

1 jalapeno diced

1 tbs cumin

1tbs chili powder

2 bay leaves

4 cups of chicken broth

 

Directions

Add crushed and diced tomatoes to slow cooker.

Add chicken.

Add zucchini, onion, garlic, jalapeno, cumin, chili powder, bay leaves.

Add chicken broth.

Stir, cover, and cook on low for 7-8 hours or on high for 3-4 hours.

Take chicken out, shred and stir back in slow cooker.

Serve with your favorite toppings such as tortilla strips, avocado, and cilantro.

Notes
  1. Use a 6 quart slow cooker for best results.
