Slow Cooker Chicken and Vegetable Soup (paleo, gluten-free)

  

 

I love making this simple Slow Cooker Chicken and Vegetable Soup when we are feeling under the weather.  No noodles here, and it is paleo and gluten-free.   The chicken, broth, vegetables, herbs and turmeric simmer together to delicious and comforting soup perfection, while boosting your immune system with its healing properties.  You can use any potatoes of course, but if you want to keep it Paleo you can use my favorite, golden yams or white sweet potatoes.  My picky children and husband all love this nutritious soup and it is super easy to throw together.  Perfect for lunch or dinner, and makes great left overs.


Ingredients

2 boneless, skinless, chicken breasts

1 large golden yam (white sweet potato), peeled and chopped

2 carrots, peeled and chopped

1 onion, chopped

2 bay leaves

1 tbs dry parsley

1 tsp dry thyme

1 tsp turmeric

1 tsp salt

8 cups of chicken broth

fresh ground black pepper for serving

Directions

  1. Place chicken breasts, sweet potato, carrots, onion, bay leaves, parsley, thyme, turmeric, and salt to slow cooker.  
  2. Add chicken broth. Stir.  
  3. Cover and cook on low for 8-10 hours, or on high for 4-5 hours.
  4. Uncover, take out and shred chicken, and place back into the slow cooker.  Stir and serve with fresh ground pepper.
