Slow Cooker Corned Beef

I have always loved corned beef, but I have never made it myself before. There is a local deli where they serve the most amazing corned beef sandwiches. The meat is super tender and flavorful and they serve it with a delicious mustard aioli.  This year I decided to make my own….I know I can always trust my lovely slow cooker to make any type of meat tender so I went out and bought a flat beef brisket and decide to give it a try. Man oh man…..it came out good.  The kids loved it and so did the hubby….who by the way has never tried it before.  It really is a simple one pot meal that incorporates meat and veggies for a hearty, warm, and delicious slow cooker meal on any night, not just on St. Patrick’s Day.  This slow cooker corned beef recipe is one of the simplest and easiest recipes you will ever make.  All you need to do is add your veggies, top with the corned beef, add your liquid and seasoning, cover it and set it and forget it.

Ingredients:


3 lbs corned beef brisket

1 medium onion, quartered

6-8 yukon gold potatoes, quartered

12 carrots

4-6 parsley sprigs

spice packet that comes with the corned beef brisket (optional)

2 cups beef broth

1 garlic clove, minced

1 tablespoon Worcestershire sauce

2 cups water

Directions:

Spray a large slow cooker with nonstick spray.

Place onion, potatoes and carrots in bottom of the slow cooker.

Place corned beef, fatty side on top.

Add parsley sprigs.

Sprinkle the included spice packet over the corned beef (optional).

Mix together broth, garlic, Worcestershire sauce.

Pour the liquid over brisket.

Add the water, enough to cover the brisket.

Cover slow cooker.

Cook on low setting for 8 to 10 hours, or on high for 4 to 5 hours.

To serve, discard cooking liquid, slice meat and serve with vegetables and mustard if desired.
