Slow Cooker Creamy Potato Soup

I have been on a soup kick lately.  During the winter months, all I want for dinner is bowl of something comforting. This creamy and thick  slow cooker potato soup is made with simple ingredients and full of flavor.  Throw them all in the crockpot and finish it hours later in just a few minutes. Really easy and so delicious. This slow cooker potato soup is one of my favorite meals. I serve with a salad and some french bread to dip.

 


Ingredients:

8-10 medium yukon gold potatoes

4 cups low-sodium chicken both

1 tbs olive oil

1 shallot chopped

1 onion chopped

4 garlic cloves minced

1 tbs fresh parsley chopped

1 tsp salt

1 tsp pepper

1 cup heavy cream or milk

1 cup shredded cheddar

Directions:

  1. Dice the potatoes in 1/2 inch cubes.
  2. Add them to the crockpot.

3. Saute onions, garlic, and shallots, until soft in 1 tbs olive oil and add to the crockpot. 

4. Add parsley, salt, and pepper.

5. Add chicken broth and mix all ingredients.

6. Cover and cook on low for 6-8 hours on high for 3-4 hours.

7. Use an immersion blender or a potato masher to blend though about 3/4 of the soup. 

8. Add milk or cream and cheese. 

9. Mix well.

10. Serve with your favorite toppings like chopped bacon, green onions, and of course more cheese.
