Slow Cooker French Onion Soup

Day 19

One of my all time favorite soups.  This slow cooker french onion soup is full of flavor and so easy to throw together.  I love to serve it on nights when Tyler grills a yummy steak. If you love onions and soup you will love this!!!


Ingredients:

3 tbs salted butter

1 tbs extra virgin olive oil

4 large yellow onions, thinly sliced

2 tsp sugar

1 tsp salt

1 tsp black pepper

2 tbs flour

3-4 sprigs fresh thyme

1/2 cup dry white wine

1/4 cup cooking sherry

4 cups beef broth

For Serving:

Baguette slices

low-fat shredded mozzarella cheese

Directions:

In a large pan over medium-high heat, melt the butter and add the olive oil.

Add onions to pan and cook, stirring often, until golden brown or about 10 minutes.

Stir in sugar, salt, pepper, and flour.

Stir well.

Add onions to slow cooker.

Add thyme.

Pour beef broth.

Add white wine and sherry.

Stir one more time.

Cover and cook on low for 5-6 hours on on high for 2-3 hours.

Preheat broiler.

Place baguette slices on baking sheet and top with an even layer of low-fat mozzarella cheese and broil until golden brown.

Top each serving with a cheese toast and some more thyme or chives.

Enjoy.
