Slow Cooker Garlic Rosemary Chicken and Potatoes

Day 10

Wow…10 days and I am already struggling.  Not with the cooking but with the photos and the posts.  Baby Jake is also not taking good naps…today..it was 10-15 minute naps every two hours…and he loves being held…so I couldn’t do much.  This isn’t easy but, at the end of the night, when the house is quiet and everyone is asleep, this is so therapeutic for me. I feel like this is my little project and I am doing something for me..something I am enjoying in between the never ending laundry, cleaning, and taking care of kiddos.  Today’s dinner was slow cooker garlic rosemary chicken and potatoes….long title but simple dish that is enjoyed by even the pickiest of eaters.  This crockpot chicken and potato dinner takes a few minutes to put together but it is so tasty…I hope you will give it a try.


Ingredients

6 Yukon gold potatoes, cut into 1 inch pieces

4 garlic cloves minced

4 boneless skinless chicken breasts

1 tbs garlic powder

1 tsp seasoned salt

1 tsp black pepper

2 tbs extra virgin olive oil

1 tbs fresh rosemary, minced

3/4 low sodium chicken broth

Directions

Peel and cut potatoes in 1 inch pieces.

Place in slow cooker.

Add minced garlic.

In a small bowl mix garlic powder, seasoned salt, and pepper.

Sprinkle both sides of chicken breasts with seasoning mix.

In a large skillet add olive oil and sear chicken 1-2 minutes per side.

Place on top of potatoes in slow cooker.

Add chicken broth.

Cover and cook on low for 6-7 hours or on high for 3-4 hours.
