Slow Cooker Italian Sausage and Peppers

 

This easy Slow Cooker Italian Sausage and Peppers recipe is really easy to throw together and it’s perfect for game day or a weeknight dinner.  Browned Italian chicken sausage layered with onions, bell peppers, tomatoes, and Italian seasonings are cooked low and slow to create an amazingly flavorful Italian dish that satisfies even the pickiest of eaters. Sausages come out incredibly tender and the vegetable and tomatoes create a delicious sauce.  This crockpot sausage and peppers recipe is great for any night with minimal prep and effort.  This easy recipe is perfect for any time of year and can be easily customized with different kinds of sausage.  Hope you enjoy it as much as my family does. 

Ingredients:


2 tbs extra virgin olive oil

1 lb uncooked Italian chicken sausage (5 links), cut into three pieces

1 large yellow onion, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 28 oz can diced tomatoes

1 4 oz can tomato sauce

1/4 cup water

1 tbs Italian seasoning

1 tsp salt

1 tsp pepper

1 basil leaf

2 tbs fresh chopped parsley (1 tbs. for cooking and 1 tbs. for serving)

Directions:

Add oil to large pan over medium high heat.

Brown sausages well on all sides (you do not have to cook them through).

Add sausages to slow cooker.

Add onions and bell peppers to slow cooker.

Add diced tomatoes, tomato sauce, water, Italian seasoning, salt, pepper, basil leaf, and 1 tbs. fresh chopped parsley to slow cooker.

Stir.

Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Uncover and stir in fresh chopped parsley.

Serve over pasta or as a sandwich.
