Slow Cooker Mashed Potatoes

Happy Mother’s Day to all the moms out there! It is a tough job that never stops, but so rewarding. Today my dear husband will be grilling for dinner so I want to make  something easy.  I am actually making a side dish in the slow cooker…yup you read the title right slow cooker mashed potatoes.  These crockpot mashed potatoes are so creamy and delicious and really easy to make.  Anything that I can make in a crockpot and not have to worry about for a few hours I really love.  


Ingredients:

8 medium Yukon Gold Potatoes

1/2 cup butter, divided and cut into small pieces

2 cups vegetable broth

1 tsp salt

1/2 tsp pepper

1/2 cup greek yogurt or sour cream

1/3 cup of milk

Directions:

Peel and then cut potatoes into 1-inch pieces.

Grease a large 4 quart crock pot with non-stick cooking spray.

Place the cut potatoes into the crock pot.

Add the butter on top.

Pour in the 2 cups of vegetable broth.

Cover and cook on low for 7-8 hours and on high for for 4-5 hours.

Use a potato masher or electric mixer to mash potatoes.

Add greek yogurt or sour cream, salt, pepper, and milk, and stir.

Top with fresh chives.
