Slow Cooker Mexican Quinoa

It’s been 4 months since I had the baby and I felt like it was time to drop some of the baby weight. I was at Costco and sat this 3 day cleanse that involved 3 daily organic pressed juices and a meal plan.  The cleanse is not necessarily to lose weight but jumpstart you on a healthy eating path. Anyway there was a recipe for quinoa and it didn’t sound great so I thought….hmm why not doctor it up so that its tastier but still healthy.  This is what I cam up with and I make it weekly so that I have it for lunches and a quick dinner when short on time.  Even if you don’t like quinoa, this slow cooker Mexican version is one to try because it is so packed full of flavor.

INGREDIENTS
1 15oz. can black beans
1 14.5 oz. can fire roasted diced tomatoes
1 15 oz. can kernel corn
1 4 oz. mild diced chiles
1 tbs. chili powder
2 tsp paprika
2 tsp cumin
2 tsp garlic powder
1 tsp oregano
1 tsp seasoned salt
1 tsp pepper
1 cup rinsed quinoa
2 cups chicken broth
Serve with fresh chopped cilantro and a wedge of lime.


DIRECTIONS

Add black beans, tomatoes, corn, chiles to a 6 quart slow cooker.
Add paprika, cumin, garlic powder, oregano, salt, and pepper, and quinoa.

Add chicken broth.
Stir well.

Cover and cook on high for 1 1/2 to 2 hours depending on you slow cooker.
