Slow Cooker Minestrone Soup

I love minestrone soup.  It’s so hearty,full of delicious veggies, and making it in a slow cooker allows the flavors to blend and create a savory tomato based broth.  The vegetables become really tender and even my picky daughters love it.  This crockpot minestrone is probably one of the easiest and tastiest slow cooker meals you will ever make.


Ingredients

1 onion

4 carrots diced

4 stalks celery diced

2 garlic cloves minced

1tsp Italian seasoning

1 bay leaf

1 8 oz tomato sauce

1 14.5 oz can diced tomatoes with basil, garlic, oregano

1 14.5 oz can kidney beans

7 cups veggie broth

3 zucchinis diced

1 cup ditalini pasta

Directions

Place onions, carrots, celery, garlic, Italian seasoning and bay leaf.

Add tomato sauce, tomatoes, beans.

Add broth and stir.

Cook on high for 3-4 hours or on low for 6-8 hours.

Add zucchini and Ditalini pasta cook for 30 mins more.

Serve warm topped with parmesan cheese.
