I am Romanian Orthodox and every year before Easter we fast and don’t eat any meat for forty days. I love this time because I love creating different vegetarian dishes, especially ones that involve mushrooms. I also love beef stroganoff, but this slow cooker version is so flavorful you will not miss the beef at all. The mushrooms and spinach create a decadent sauce that is delicious served over rice or noodles.


Ingredients
1 tablespoon butter

16oz white mushrooms, quartered

8oz cremini mushrooms, quartered

1 yellow medium onion; diced

4 cloves of garlic; minced

3 cups vegetable  broth 

8oz sour cream 

3 tablespoons tomato paste

2 tbs Worcestershire sauce

1 teaspoon black pepper

1 teaspoons paprika

8oz cream cheese

2 cups of spinach

Directions
Place butter, mushrooms, onion and garlic in crockpot.

In a measuring cup or separate bowl, mix together broth, sour cream, tomato paste, Worcestershire sauce, black pepper, and paprika.

Pour mixture over mushrooms, onions, and garlic.

Cook on low for 5-6 hours or on high for 3-4 hours.

Add cream cheese and spinach.

Stir.

Cook  for about 20 mins more or until everything is heated through and spinach is wilted.
