Slow Cooker Paleo Beef Chili

It’s still very hot here in southern California during the day but the nights have become more cool.  I am in full fall mode over here craving chilis, stews, and pumpkin spice lattes. This slow cooker hearty beef chili is healthy, hearty, delicious and bean free.  Totally delicious on baked potatoes, chips, or salads and paleo friendly. It’s perfect for busy nights and football games and you can customize it to everyone’s liking with a variety of toppings.  It is a favorite in our home and I’m sure it will be in yours.

Ingredients:


2 tbs. extra virgin olive oil

2 pounds grass-fed ground beef 

1 large yellow onion, diced

4 garlic cloves, minced

1 28 oz cans diced tomatoes with juice

1 28 oz can crushed tomatoes

1 14.5 oz can fire roasted tomatoes

1 green bell pepper, seeded and chopped

1 cup beef stock

2 tbs dried oregano

1 tbs chili powder

1 tbs smoked paprika

1 tsp cumin

1 tsp salt

1 tsp ground black pepper

Directions:

Heat oil in a large skillet over medium high heat.

Add beef, and cook, stirring often and breaking up the beef until the beef is browned,  about 5 to 6 minutes.

Add onions and garlic, and cook until softened.

Add mixture to slow cooker.

Add canned tomatoes, bell pepper, beef stock, oregano, chili powder, paprika, cumin, salt, and pepper.

Cover and set slow cooker on low for 8-10 hours or on high for 4-5 hours.

Serve with your favorite toppings.
