Slow Cooker Paprika Chicken and Sweet Potatoes

          

I have eliminated gluten and dairy out of my diet and I have to say I feel great.  I have been focusing on creating easy one-pot meals that are simple, use fresh ingredients, and free of gluten and dairy. I love the taste and color the paprika adds to this incredible dish.  This slow cooker paprika chicken thighs and sweet potatoes one pot meal is a delicious and easy dinner that can be prepped in a matter of minutes.  No extra liquid is needed as the chicken and potatoes release a good amount on their own.  

Ingredients:


Cooking spray

2 large sweet potatoes, or yams, peeled and cut into chunks

1/2 tsp salt

1 tbs. avocado oil, or extra virgin olive oil

6-7 boneless, skinless chicken thighs

2 tsp paprika

1 tsp salt

1/2 tsp pepper

4-5 fresh thyme sprigs

Directions

Spray your 5-6 quart slow cooker with cooking spray.

Add sweet potato chunks to slow cooker. Sprinkle with 1/2 tsp salt.

Add oil to large skillet over medium-high heat.

Sprinkle chicken thighs with paprika, salt, and pepper.  Add to skillet and sear until golden brown on both sides. About 3-4 minutes on each side.

Place chicken thighs over sweet potatoes.  Add thyme sprigs.

Cover and cook on low for 6-7 hours or on high for 3-4 hours.
