Slow Cooker Ribs and Beans

Last week I was craving ribs and ran out to buy the ingredients after dropping the girls off at school…and then assembled it in less than 10 minutes. By the time I picked them up from school the house smelled amazing…and tadaaa…dinner was done. These slow cooker ribs literally fall off the bone and the beans are infused with a ton of flavor from the ribs, bbq sauce, and seasonings. It’s a great and easy dish without much prep work, just assemble all of the ingredients in the crockpot and you will have a lovely and tasty dinner. My hubby is a food snob and very picky about his ribs and let me tell you, he absolutely loved these. What also makes this dish even better is the homemade bbq sauce…I love to make my own and Gimme Some Oven has a delicious and simple one. Its so so easy and you probably have most if not all the ingredients in your pantry. This dish is sure to be devoured by all meat lovers out there. Enjoy!

Ingredients:


2 cans pinto beans

1 can kidney beans

3.5-4 lb St. Louis pork ribs

1 yellow onion roughly chopped

2 cups bbq sauce (I am in love with this homemade version from Gimme Some Oven)

2 tbs paprika

3 tbs brown sugar

1 tsp garlic powder

1 tsp salt

1 tsp pepper

1/4 tsp cayenne

Directions:

Place beans and chopped onion in bottom of slow cooker.

In a small bowl mix paprika, brown sugar, garlic powder, salt, pepper, and cayenne.

Rub spice mixture all over ribs.

Place ribs on top of beans with meaty side facing the walls of the crockpot.

Pour bbq sauce to fully coat the ribs.

Cover and set on low for 6-7 hours or on high for 3-4 hours.

When done take the ribs out and slice. Brush with more tasty bbq sauce.

Skim any fat off the beans.

Serve on top of beans with extra bbq sauce.
