I haven’t been posting for a while. I’ve had some health issues that thank the Lord are now and hopefully forever taken care of. I’ve also started teaching full-time, while at the same time trying to balance my home life with two very needy little girls, and a nine month old baby. To top everything off….my husband is living away from home during the week because he was just hired as a firefighter. So many blessings and so little time. But I am back and I have decided I really need to continue this blog because it makes me oh so happy to hear from you and know that my recipes have helped put dinner on the table for another busy family. Plus it’s very therapeutic for me ….it’s my little happy corner where after a long day I can write and share my photos and obsessive passion with food. 

Ok enough of that! Here is one of the easiest recipes you will ever make. This slow cooker salsa verde chicken tacos recipe will seriously become a regular in your household. Just a few ingredients and you have a delicious salsa verde chicken filling for tacos, nachos or a bed of lettuce.

Ingredients:

4 boneless, skinless chicken breasts

1 tablespoon dry oregano

1 teaspoon cumin

1 teaspoon sea salt

1 1/2 cups salsa verde

Directions:

  1. Place chicken in slow cooker.
  2. Sprinkle oregano, cumin, and salt evenly on chicken. crockpotchickenverde

  4. Cook on high for 3-4 hours or on low for 7-10 hours.
  5. Shred the chicken in the slow cooker and mix with the juices.
  6. Serve on top of your favorite tortillas with your favorite toppings!
