Slow Cooker Spinach Artichoke Dip

I have made the oven version of this spinach artichoke dip before and although it was good, I think it is so much more convenient to make it in the slow cooker.  One of the reasons I love my slow cooker is because I get to prep, throw everything in the crockpot, and run errands, go to work, or take care of miscellaneous things around the house.  Having two kids, one on the way, and a full-time teaching job keeps me quite busy….I never run out of things to do.  But now back to this amazing slow cooker spinach artichoke dip.  It is made with lots of fresh spinach, artichokes, fresh garlic, an array of cheeses, and because we are all trying to make healthier choices these days greek yogurt.  All simple ingredients that come together to create a creamy, warm, and delicious dip.

Ingredients:


1 10 oz. bag fresh baby spinach, roughly chopped

1 13.75 oz. can quartered artichoke hearts, chopped and drained

1 8 oz. brick low-fat cream cheese, cut into 1-inch cubes

1 1/2 cup shredded Mozzarella cheese

1 cup grated Parmesan cheese

1 cup plain Greek yogurt

6 cloves garlic, minced

1/2 tsp. black pepper

1/2 tsp. salt

Directions:

1.Add chopped spinach to the crockpot.

2. Add artichokes, cream cheese, parmesan cheese, mozzarella cheese, greek yogurt, garlic, salt, and pepper.

3.Combine all ingredients.

4. Set on low for 3-4 hours or on high for 2 hours.

5. Serve with chips or veggies!
