I am a lover of soups. All soups. I have never met a soup I have not liked. It is my go to meal when I’m happy, sad, or sick.
Homemade slow cooker tomato basil soup is perfect for chilly or busy nights and the little ones if you have any will gobble this up if you pair it with a grilled cheese. By adding all the ingredients in your crockpot in the morning this easy, fragrant, and comforting soup practically cooks itself.
1 quart of low-sodium chicken broth
2 28 oz cans of crushed tomatoes
2 tablespoons of olive oil
½ medium onion roughly chopped
2 cloves of garlic, peeled
2 tablespoons chopped fresh basil
1 tablespoon fresh parsley
1 tablespoon dried oregano
½ cup of heavy cream
salt and pepper to taste
onions and garlic in 1-2 tbs olive oil.
2. Add sautéed onions and garlic,
chicken broth, tomatoes, basil, parsley, and dried oregano.
3. Cook on high for 5 hours or on
low for 8 hours.
4. Add heavy cream when soup is
done cooking and stir.
5. Add half of a cup of grated parmesan cheese and stir.
6. Top with a little more parmesan cheese and some
fresh basil and pepper.
